It would be easier to view if you attach the photos to a post on the forum.
Just scroll down to the next box when you reply and click "manage attachments"

Hate to break it to you...
I'm sorry, but after reviewing your photos, your dog is not a Staffordshire mix. Star is most defiantly a pit bull mix. Staffys are thick, large-headed dogs. It is a common misunderstanding with Pit bulls and other related breeds.
As far as Star's behavior, it sounds to me that she's very insecure. Dogs with this problem may do well on a leash b/c you are taking control while walking her. The nipping is most likely her fear of the unknown (being people) and can be rectified by you. Start out by keeping her on a leash when people come over. Do not try to pacify her with pretty and soft hearted words. No touching either. Say nothing to her. Allow her to be in the same space as the guest and follow them where ever they go throughout the house. Once you feel she is getting comfortable (ears back, tail not tucked under, laying down with head low or belly exposed), hand the leash over to your guest. Also, keeping treats on hand to have strangers feed to her is helpful as well. The key is building trust gradually. It will be a long process and you must be patient if you want to help your dog. Otherwise, her fear could lead to biting, which isn't good for anyone.
Good luck with your baby girl!
