When our IWS / Poodle mix comes out of her crate so we can take her our she always pees a little, WHY? This happens even if she was walked not to long ago.

You are taking her from her "safe place" or den and she doesn't have any choice in whether or not she goes with you. Urination is often a submission signal, or a signal that she is under some stress.
You might try taking the crate to the door, open the hatch and offer her a new fun environment. If she motivates herself instead of you picking her up, you may have better luck.
