The best thing to do is give it a cuddle straight after & a doggy choc & say sternly pointing your finger'Dont do it again'

Sounds sort of hopeless. I guess all dogs love it, you might try telling him off when he does, and giving him a treat when he doesn't, but if that doesn't work, I guess I'm out of ideas....

You cant that is the quick answer. It is a throwback to when all dogs were wolves, they used to roll in muck to hide their scent when hunting so the prey wouldn't smell them, The muck hid their scent and the prey wouldn't bother about them as much. The same is for a dog burying a bone it is hiding it so it is in reserve if they have a hungry day when they catch nothing.

the reason a dog rolls in muck is to bring a message home to everyone else, they can't say that they smelt a fox or what ever they rolled in, so they roll in the muck to let everyone at home know they came across an area where there was something of interest, i know it is fustrating but they are just finding other ways to comunicate. I know this doesn't help you to stop the dog, but atleast you know why they do it now

You can always tell when there just about to roll. If you learn their body language so you know its going to happen you can mostly stop it, theres always going to be the one you cant though. What you do is to teach it to recall from any situation so if they decide to roll and you catch them before they go down you will get their attention and then you can call them to you. If they are mid roll then a firm NO and drag them away then give them something else to do ie a game to distract them and carry on the walk. You have to teach the dog to leave things like this alone and obey your commands every time but also make it fun for them too. It is possible to stop them rolling i do this with my dog and rarely rolls now.
