lots of places you can go, i personally am particuarly fond of the NE, E and SE coast line, from mt william national park to the freycenet(sp?). Very very pretty, there are many coastal towns along the way that provide accomodation from on site vans to luxuary resorts.
Tas is quite good for a driving holiday,(you can pretty much drive from one end of tas to the other in about 4 hours) bring your own car on the spirit into devonport work your way down the east coast to hobart and port authur, and then work you way back up through either central tas, exploring towns and the central plateu, or up the west coast wich is a pretty but very rugged coast line (i prefer the long sandy beaches myself)
